Sushi Fix Big Bowl

I am addicted to Sushi. I would eat it for every meal if I could, but sadly no sushi restaurant is open at 6 am in North Vancouver. 

Although I love sushi, I can't always justify spending my hard earned cash on a Yam Crunch Roll or Spicy Tuna Sashimi. Instead I like to mix it up once in a while and fix up my deconstructed sushi roll, big bowl. Super easy and delicious, you can make extra and take it for lunch the next day!

Ingredients

Bowl:

  • 1/2 cup cooked brown rice
  • 1/2 one large carrot
  • 1/4 cucumber sliced
  • 1/2 cup edamame beans (I used Presidence Choice Frozen Edamame already shelled)
  • 1 Avocado
  • 1/2 yam, cubed and baked
  • 1 tbsp Sesame Seeds 
  • 1 package Seaweed Snack

Dressing:

  • 1 tbsp Peanut Butter
  • 1 tbsp Rice Wine Vinegar
  • 2 tbsp Soy Sauce
  • 2 tbsp Water 

Combine all ingredients in a nice big bowl. Blend together dressing ingredients and pour over your sushi bowl!
